We make our wines exclusively with grapes from our own little vineyard, a 15 acre parcel that we planted more than 2 decades ago.

Grapes: 20% Sauvignon Blanc, 80% Serna (A.k.a CG 102.354, a table grape variety developed in Argentina. Crossbreeding of Moscatel Rosado Nº 2 x (Cardinal x Sultanina)).

Winemaking: After the destemming process, we press the handpicked grapes with an 100 years old manual press. The juice is settled during 24 hours at low temperature in a stainless steel tank. We keep the wine at low temperatures to keep the natural sugar of the grapes.
Tasting notes:
Bright and limpid, with a sutil yellow and green hue.
Floral and fruity aromas.
Very good combination of sweetness and acidity.

Dolzó Rosé Dulce Natural

Winemaking information: It’s a saignee rosé wine. After the destemming process, the grapes are sent directly into the stainless steel tank. We let the skins rest with the juice for approximately 1 hour. The process then is almost the same of the white wines.
Tasting notes:
Shiny and clear, with a very subtle pinkish gleam.
Aromas of plum and red fruit jam.
Unctuous balance between sweetness and acidity.
Km 1120 White

Grapes: 53% Sauvignon Blanc, 22% Chardonnay, 25% Serna Serna (A.k.a CG 102.354, a table grape variety developed in Argentina. Crossbreeding of Moscatel Rosado Nº 2 x (Cardinal x Sultanina)).

Winemaking:At the end of February 2024, we began vinifying Chardonnay grapes with Sauvignon Blanc. In mid-March 2024 we vinified the Serna grapes separately. In both cases the clusters were carefully selected and fermentation was carried out at 60.8 ° F (16 ° C) over a period of two weeks.
At the end of April, when the wines were ready, we put together the final composition of the blend. During the whole process we worked with low temperatures (between 55.4 ° F / 13° C and 57.2 °F / 14° C) to avoid the loss of aromas and other compounds.
Tasting notes: Pale yellow color with very subtle greenish flashes. Fresh aromas, with citrus and fruity notes. On the palate, perfect balance between the acidity of Sauvignon Blanc and Chardonnay, along with the persistent liveliness of Serna.
